In October 2025, the Union of Baking Centres (UBC) team visited HOST Milano 2025 — one of the most significant global events for professionals in the HoReCa, bakery, pastry, coffee, and gastronomy sectors.
Traditionally held at the Fiera Milano exhibition complex (Rho, Italy), the fair brought together more than 2,000 exhibitors from across the world.
It is here that trends are born which shape the future of the food industry — from production technologies to spatial design and sustainable development concepts.

For our team, this trip was an essential part of our ongoing mission — to study the best global solutions and bring them to Ukraine, ensuring the continued growth and modernization of the national bakery and pastry industry.

Technological automation — the new standard of efficiency

One of the most prominent trends of HOST Milano 2025 was automation and digitalization of production processes.
Equipment manufacturers showcased “smart” ovens, mixers, fermenters, and packaging lines connected to cloud systems that allow real-time monitoring and control.

These innovations ensure consistent product quality, energy savings, and reduced human error.
For the Ukrainian market, this is particularly relevant — automation enables businesses to grow even in challenging conditions, increasing productivity without compromising quality.

In the MIPPP – Milano Bakery Pizza Pasta area, visitors could see how bakers from around the world combined traditional recipes with modern technologies — natural sourdoughs, long fermentation, natural flavor enhancers, gluten-free mixes, and innovative flour types.

For Ukrainian bakers, this was powerful inspiration — to create products with authenticity, character, and high nutritional value.

Our takeaway: the artisan format is not only about technology but about a philosophy of craftsmanship where ingredient quality, skill, and emotional connection with the consumer take center stage.

Energy efficiency and sustainability

Another key direction was sustainability and environmental responsibility.
Most exhibitors presented energy-efficient equipment, heat-recovery systems, and solutions to reduce water consumption and reuse resources.
Many companies received the Smart Label – Innovation Award for developing technologies that combine performance with environmental care.

Our takeaway: “green” technology is not a trend but a necessity. Equipment that saves resources and reduces emissions is becoming a decisive factor of competitiveness.

Design, aesthetics, and customer experience

A particularly impressive focus was “Equipment + Design + Experience.”
Brands like ISA Italy demonstrated that a modern bakery or café is not just about production but about emotion and atmosphere.
Modular showcases, customized furniture, lighting, and integrated refrigeration systems are now designed to make products look their absolute best.

Our takeaway: design and presentation have become part of the product itself. Businesses should offer clients not just equipment, but a complete concept — technology + aesthetics + comfort.
